Sugarless Eggnog

If you crave eggnog, but don’t want the sugar overload-this recipe is for you! To maximize your indulgence, top with freshly grated nutmeg.

Ingredients

One 1-ounce package Jell-O sugar free instant vanilla pudding mix
5 c low fat milk
¼ c rum – or ½ tsp rum flavoring
½ tsp vanilla extract
Freshly grated nutmeg – add more to taste
Sugar free whipped cream

Instructions

  1. Place the pudding mix powder into a large mixing bowl. Slowly whisk in the milk until smooth. Blend in the rum, vanilla, and ¼ tsp nutmeg. Cover and chill before serving; best when flavors can blend overnight.
  2. Serve in small ½ cup portions topped with a squirt of sugar free whipped cream and a little freshly grated nutmeg.
