Leave your guests wondering where you attended culinary magic school with this fantastic sugar free strawberry ice cream dessert. Enjoyed by kids and adults alike, this crowd pleaser only contains minimal ingredients and can be created in 10 minutes.
- 2 cups frozen strawberries
- ⅔ cup part skim ricotta
- 2 tablespoons Truvia (optional)
- 1 teaspoon vanilla
- Place strawberries in the bowl of food processor and leave at room temperature for 15 minutes to soften slightly. Add ricotta, sweetener (if using) and vanilla and pulse, grind, and blend until a very silky smooth soft serve ice cream forms. Remove the blade, pop into the freezer for ten minutes to firm up slightly and serve immediately.
